Three Course Monday

We had a pretty amazing dinner last night, for absolutely no reason except we
got home late after a long day and wanted a culinary treat while watching
What Happens In Kavos...


Our starter was a broccoli soup. I mad chicken stock and added a whole
broccoli, a red onion, some garlic and a teaspoon of pepper, which I simmered
for 10 minutes before blending it.


  Once the soup was blended and heated up again, I grated some parmesan
  cheese (the one we bought at the Borough Market!) and added a spoonful
  of low fat Greek Yoghurt. I had never made home made broccoli soup before
  but it was great, so I'm looking forward to having the leftovers for dinner

  Our main course was chicken wrapped in mozzarella and bacon on a bed
  of kale and red onion. I baked the chicken in the oven while steaming the
  kale and red onion in a pan with a splash of balsamic vinegar.

 For dessert we had a berry smoothie, which consisted of raspberries,
 blueberries, low fat greek yoghurt, ice cubes and a splash of milk. It's so
 healthy, I made four portions so we could have another glass for breakfast
 this morning!
